«This session will explore our distinctive 70-30 approach, where hospitality is built on a seamless blend of exceptional service and expertly crafted drinks. We will delve into the key aspects that make the experience at 69 Colebrooke Row truly special, breaking down how we create a sense of theatre, precision, and warmth to achieve the ‘wow’ effect for our guests. In addition to service, we’ll share insights into our unique approach to drink-making, which is deeply inspired by the art of perfumery. From structure and balance to the way aromas unfold, we apply fragrance principles to create drinks that are layered, expressive, and memorable.»
Originally from Ljubljana, Slovenia, I moved to London nine years ago to immerse myself in its dynamic bar and cocktail scene. My career has taken me through some of the city’s most renowned establishments, including 366, The Ned Hotel, and The Connaught Hotel, where I honed my craft and developed a passion for exceptional hospitality. Alongside my time in London, I gained international experience in Stuttgart, Germany, and New Zealand, broadening my perspective on global trends and techniques. Four years ago, I embarked on a new chapter, taking over the management of 69 Colebrooke Row, a role that allowed me to refine my expertise and create memorable guest experiences.
Tanny has been with 69 Colebrooke Row for three years, following a previous career as a teacher. During this time, she has embarked on numerous adventures, including guest shifts in Rimini and traveling to Colombia and Mexico, where she gained first-hand experience in coffee and mezcal production. She has also played a key role in assisting with the bar’s management and supporting the team.
