We asked Michele Garofalo and Davide Cobelli what this seminar will be about:

«The seminar aims to explore the origins of coffee by analyzing the plant, its varieties, processing methods, and brewing systems. It will also provide a detailed chronology of key milestones that have influenced the use of coffee in mixology up to modern trends, mapping pairings that create both classic and unexpected combinations.»

Michele Garofalo

Sicilian, born in 1986, he began his bartending career in London, working at some of the city’s top venues and becoming a supervisor at Mews Mayfair and BVLGARI Hotel & Resort. After returning to Italy, he continued as a manager at D.O.M. Hotel and the Jerry Thomas Project, where he also became a trainer for the Academy. He later became an ambassador for Del Professore Vermouth & Spirit and eventually a partner in the group. Passionate about mixology, he specializes in research and development and now works as a project manager for consultancy and start-ups in the industry. Since 2019, he has been the Educational and Operations Director for the Roma Bar Show.

Davide Cobelli

Davide Cobelli, originally from Verona, is a recognized expert in the coffee world, with a career spanning from café management to professional training. Founder of the Coffee Training Academy and Italian Roasting Champion in 2020, he is now a Master Roaster at Garage Coffee Bros. His mission is to promote quality coffee culture through consultancy, courses, and an artisanal approach to roasting.
