Faye Chen is the Co-Founder, General Manager, and Bartender of Double Chicken Please a design-driven cocktail bar on New York’s Lower East Side and a multiple-year honoree on the World’s 50 Best Bars list.

An 18-year industry veteran, Faye’s path began in Taiwan’s craft cocktail scene before taking her to Shanghai, where she managed Speak Low — a World’s 50 Best Bars honoree under acclaimed bartender Shingo Gokan. She went on to win the Bacardi Legacy China Cocktail Competition, earning her a spot in the Global Finals.

Before opening Double Chicken Please, Faye and co-founder GN Chan hit the road in a 1977 VW minibus, traveling 10,000 miles across the U.S., testing ideas and building the creative foundation for what the bar would become.

Today, Double Chicken Please operates as a creative studio that blends design and hospitality to push creative boundaries and deliver unexpected experiences. The bar houses two distinct concepts — FREE RANGE, an interactive experience with a plinko-inspired cocktail menu, and The Coop, where the craft cocktail program is guided by “hacking design”: deconstructing the flavors of culinary dishes and rebuilding them into cocktails, and vice versa. Beyond the bar, the

brand’s creative practice spans culture, art, product design, and cross-industry collaborations.

Faye leads every facet of the operation, from behind the stick several nights a week to shaping the bar’s broader vision. She is a strong believer that the future of hospitality lies in continuous learning and knowledge exchange — fostering a collaborative industry culture where innovation, mentorship, and shared growth elevate not just individual bars, but the craft as a whole.
