Born in 1979, he has spent 25 years behind the bar. After 10 years of experience in one of the main high-volume venues on the Riviera and a period in Amsterdam at Tales & Spirits (w50bb), he opened Aguardiente in 2016, where he fully developed his vision of a bar. Passionate about the world of sugarcane, he focuses his research on the French Antilles, Haiti and Brazil, undertaking dozens of trips. His friendship and collaboration with Luca Gargano and Velier have further shaped a passion that soon turned into a true obsession, to which he chose to dedicate his life. A collector of sugarcane distillates, he now boasts around 3,000 labels, all available for tasting at Aguardiente. A lover of gastronomy in all its forms, for over three years he has also been dedicated to fine dining, visiting dozens of outstanding culinary establishments across Europe.
